Anna Rossi Cooks A Sequestered Chicken Recipe: 2 Tbs EVOO 2 lbs Boneless Skinless Chicken Thighs 1 medium onion, diced 1 1/2 cups green peppers, diced 2 garlic cloves, minced 1 tsp smoked paprika 1/2 tsp cumin 1 1/2 cups tomato, diced Salt and Pepper to taste Preparation: Season chicken thighs with salt and pepper. Set aside. In a large sauté pan, add EVOO and cook the onions and peppers until tender, about 5 minutes. Add the garlic and cook an additional minute. Add the smoked paprika, cumin and diced tomatoes. Cook 3 minutes until the tomatoes start to break down. Place the seasoned chicken thighs in the slow cooker and add the pepper mixture on top. Add about 3/4 cup of hot water to completely cover the mixture. Cook on high for 4 hours. At 3 1/2 hours take the chicken out and place on a rimmed cutting board and shred with two forks. Place back in the slow cooker for the remaining half hour. Serve over arepas, rice or couscous. Enjoy! . #Chicken #Recipe #NECN
