Kerala Style Spicy Mutton Roast with Flakey Laccha Paratha | Delicious Dinner Recipe

Elarchi Ularthiyathu, more simply called theMutton Roast is a typical dry meat recipe
originating in Kerala.
It is best eaten with Malabar Parotha, however,it also tastes amazing even with the Laccha Paratha.
Start by washing your mutton thoroughly.
Then add somered chilli powder for some spice,
fennel powder for that beautiful earthy flavourcoriander powder, for that hint of freshness
garam masala for some heatturmeric powder, for that pungent, bitter
flavour
And finally, some Black pepper powder andsalt for seasoning
After the dried powders add inthe ginger garlic paste
some sliced tomatoesand a few sprigs worth of curry leaves
The tomatoes help balance the spiciness inthis dish by adding a hint of freshness and
sourness!
Curry leaves help in digestion and are anti-inflammatoryby nature.
You don’t need to marinate this mutton,but marinating will intensify the flavours.
We’ll leave this aside for an hour whilewe prepare the shallots and dried coconut chips.
Heat someoil in a frying pan and toss in the coconut chips
Then add some salt and turmeric powder.
Fry these while stirring continuously for4-6 minutes or until they turn crispy and
golden.
Then remove them and set aside.
In the same oil add the sliced shallots, orSambar onions, and fry them on low heat until
they turn golden brown.
You may even use sliced onions if you prefer,however, shallots have a deeper and sweeter flavour
In a heavy bottom saucepan, heat a small quantityof oil.
Then add in some slit green chillies.
Next, add the mutton and some water to helpcook it
Cover the pan to help it cook faster.
This should take about 45 mins to 1 hour onmedium heat.
While your mutton is cooking, start makingthe dough for your Laccha paratha.
To make this delicious flaky paratha you willneed some whole wheat flour.
Add some salt and crushed fennel seeds tothe flour.
Then make a small well in the centre of thedough and add in some ghee.
Mix the ghee in with the flour.
At this stage lumps are a good thing.
Begin adding in the water a little at a timeas you keep mixing with your fingers.
Too much water will make the dough stickyand difficult to roll.
If you add too much water, do not worry, justadd more flour compensate
As the dough starts to come together ensureyou do not apply too much pressure.
This dough should be soft, so be gentle.
Different types of flour may require differentquantities of water.
This is because flour of higher quality andwith a greater fibre content tends to absorb
more water.
Cover the dough and let it rest for 30 minutes.
Now back to the mutton, Taste a small pieceto check if the meat is cooked.
If your mutton is still uncooked, you mayadd more water to help it along more.
Most of the water should have evaporated bythe time the mutton is cooked.
If not, uncover the pan and continue to cookuntil the water evaporates.
Finally, add the fried shallots and coconutchips to the mutton and mix well.
Garnish with some more curry leaves and yourspicy, earthy kerala mutton roast is ready
Now back to the parathas
smoothen the dough and even outits texture.
Start by breaking off roughly equal pieces.
Smoothen them out by rolling them betweenyour palms.
Coat your dough balls in some plain flourand press them onto your rolling surface.
Using your rolling pin, roll out a thin roundcircle, about 8-9 inches wide.
Then brush the circle with some ghee and dustlightly with flour.
After that start pleating your dough fromone end inwards.
This is what gives you the beautiful flakylayers of your paratha.
Do this until you have a thin fan like lineof dough.
Pick it up from both ends and stretch it slightly.
Place it down on its side.
Apply ghee to this side too and sprinkle withflour.
Start to twirl the dough in on itself so thelayers are sitting on top and you have a thick
rollable disk.
Repeat this with all your dough balls untilyou have as many parathas as you want.
Press down on the disk and roll it out likeyou would any normal paratha.
Place on a dry pan and wait for the bubblesto form on the surface.
When you see the bubbles turn it over.
Apply ghee to the surface and let it cook.
Turn over and apply ghee to the other sideas well.
make sure that both sides get that gorgeousgolden brown colour.
